Sylva: Is this the future of non-alcoholic dark spirits?

Ben Branson, the co-mastermind behind Seedlip, is back with another booze-free innovation.
Say hello to Sylva. The world’s first non-alcoholic dark spirit distillery and maturation lab.
Think of it as a Willy Wonka factory for grown-ups, but instead of chocolate rivers, it’s all about extracting deep, complex flavours from wood and grain but without the booze.
Sylva PADAUK
Sylva’s first creation and debut release is called Sylva PADAUK - taking its name from a bold, aromatic West African wood known for its red-orange bark. Add in red oak from Sylva’s own on-site forest, oak from Nc’nean in Scotland, and a Cambridge rye base, and you’ve got a drink that’s rich, spicy, and unlike anything else in the alcohol-free space.
How they’re doing it
Ben Branson and co-founder Jack Wareing are using a wild mix of high-tech processes, including, but probably not limited to:
🔊 Sonic maturation - Yep, sound waves to enhance flavour.
🔥 Vacuum kiln roasting - For that deep, toasty complexity.
💧 Gravity percolation - Because why not let physics do the work?
